The HiU Model Step by Step
The HiU model is based on many years of coffee producing experience. Finding quality coffee is often like playing roulette on a cupping table. Sometimes you find true specialty beans and rarely you find the true gems with extraordinary flavor profiles. HiU Coffee tries to change this process.
Our mission is to work with farmers, producers and exporters to develop coffees from the ground up. The goal is to create customized coffee lots with a score of 85 points and up. Graciano Cruz is putting his specialized coffee know how to work!
This is the process.
Identify unique selling points of farmers and producers. Varieties. Micro climate(s). Ethnical. Cultural. Processing styles.
Define the favour profile. Find out the essence of cup-quality.
Educate producers about the HiQ philosophy. Develop a joint quality plan.
Start working. Educate farmers. Measure sugar content of ripening cherries. Implement eco-friendly processing styles. Upgrade drying conditions.
Identify and track cup profiles throughout the processing chain.
Separate HiU lots with scores of 85 points or more.
Create customized packaging with units of 50 lbs (packaged vacuum in boxes) or 100 lbs (GrainPro units).
Maintain traceability of all lots.
Educate roasters about flavour profiles and about producer identities.
